Just Some Food

I've been craving this snack lately.  With the combination you'd think I'm pregnant, but no, they just taste great together (if you like fusions of different flavors).  Trader Joe's salsa verde and organic fuji apples sliced thin.  Yum!  Warning:  My hubby wasn't quite as smitten as I was.

Another new obsession is roasted potato salad with roasted garlic.  DELICIOUS!  I roast the garlic (in a garlic roaster) and potatoes (I cut them bitesized and coat them lightly with dressing) together on 425 degrees for 30 minutes.  I minced the garlic after it was roasted and mixed it all together.  This particular time I also added chives from my garden.  It is so good and awesome served warm.

Something new we tried was sloppy lentils.  A recipe found off of pinterest.  Very good!

Farmer's Markets

One of our favorite summer past times is frequenting local farmer's markets.  My son asks every few days to go to one.  Luckily we live near lots of farmers and farmer's markets.

At the Woodstock Farmer's Market there may even be an amazing balloon animal maker.

We come back with veggies that Bugs Bunny would like to it.

We make friends with the vendors and learn new things

We even get a Beautiful CSA from Trogg's Hollow.  

We get lots of greens to make beautiful salads

And at the Elgin Harvest Market a bread booth by the name of Katic has the most delicious bread selection.  European breads that are too die for!  I always get a baguette and a chocolate croissant.  And sometimes I get this herb foccacia, delicious and full of flavor

This is an awesome red pepper infused honey that we bought from a vendor at the Elgin Harvest Market.  De-Licious

Simple, Quick and Tasty

I'm all about simple meals.  When cooking without meat, meals become much simpler.  This is a quick meal that we all enjoy.  Simple, quick and tasty.  

Simple Chickpea and Brussel Sprout Saute
Slice and saute one onion for a few minutes.  Add one bag of brussel sprout shreds (brussels sprouts cut in half will work fine too), 1 can of chickpeas and seasonings to suit your taste.  (I like to add some salad dressing, garlic, salt and simply organic all purpose seasoning.)

Serve with roasted potatoes.  I just cut sweet potatoes and golden or red potatoes in half, spray them with olive oil and season them with salt and simply organic all purpose seasoning.  Put them cut side down and bake them for 30 minutes at 415 degrees.  Quick and delicious!

And then to add some extra flavor I use this.  My garlic roaster.  I found this one new-in-box when we moved into our house.  I actually had it out at our first yardsale because I didn't know what it was or how to use it.  My neighbor enlightened me and now we love to use it!

You just load it with a few garlic bunches, drizzle olive oil over it and pop it in the oven. When I cook the potatoes, I just put them in together.  But I think that 325 for 30-45 minutes is what I do when cooking them alone.  I don't know how I went 30 years without roasting garlic!  Delicious and spreads like butter.

WOW!  I just found this in my drafts and this was from the end of summer.

Herbs from the garden.  I spent a few hours cleaning and picking off the leaves. 

Basil, Parsley, Oregano, Sage

Vegan Pesto!  Made a large batch, put them in jars, then put them in the freezer to enjoy for months to come.

Dinner Lately.....

Thanks to pinterest I've had some different meals lately.  If you click on the names of some of the food it should take you to the link.  I didn't remember all of them though.  It's been nice to get back to good eating after slacking off during the holidays.  

homemade burger buns and  baked broccoli burgers - Enjoyed these recipes.  The burger buns were very simple and so were the burgers.  I would definitely put more flavor in the burgers next time, but they will be part of my recipe book now.

Baby spinach, tomato, chickpeas, avocado, salt and pepper - Simple and delicious

cream of leek and kale soup - I loved this one.

This was yummy, but I don't remember the inspiration.  This may not have been a pinterest inspiration - I just love soup!  This one tasted a lot like french onion, just with lots of veggies.

Another forgotten inspiration, but I remember it being yummy!  Lol!

sweet potato cauliflower soup - This was pretty good.  It tasted a lot like a butternut squash soup.  And I discovered how delicious roasted cauliflower is.
