I'm all about simple meals. When cooking without meat, meals become much simpler. This is a quick meal that we all enjoy. Simple, quick and tasty.
Simple Chickpea and Brussel Sprout Saute
Slice and saute one onion for a few minutes. Add one bag of brussel sprout shreds (brussels sprouts cut in half will work fine too), 1 can of chickpeas and seasonings to suit your taste. (I like to add some salad dressing, garlic, salt and simply organic all purpose seasoning.)
Serve with roasted potatoes. I just cut sweet potatoes and golden or red potatoes in half, spray them with olive oil and season them with salt and simply organic all purpose seasoning. Put them cut side down and bake them for 30 minutes at 415 degrees. Quick and delicious!
And then to add some extra flavor I use this. My garlic roaster. I found this one new-in-box when we moved into our house. I actually had it out at our first yardsale because I didn't know what it was or how to use it. My neighbor enlightened me and now we love to use it!
You just load it with a few garlic bunches, drizzle olive oil over it and pop it in the oven. When I cook the potatoes, I just put them in together. But I think that 325 for 30-45 minutes is what I do when cooking them alone. I don't know how I went 30 years without roasting garlic! Delicious and spreads like butter.
